Aubergine Crisps

METHOD:

Heat oven to 200C/180C fan/Gas 5

Slice the aubergine lengthways into thin strips. Lay out on a board and salt both back and front of the slices to draw out excess moisture. After 5 minutes wipe off any salt or water from the aubergine with kitchen roll.

Mix the miso and teriyaki into a paste and either rub or brush evenly on both sides of the strips of aubergine.

Place on baking tray in the oven for 15-20 mins until golden and crispy.  

INGREDIENTS:

  • 1 Aubergine

  • 1 tsp miso paste

  • 1 tbs teriyaki

  • salt
