Eli Brecher Shakshuka

INGREDIENTS:

(Serves 2)
1 tbsp olive oil
1 onion, diced
1 red pepper, finely chopped
1 clove of garlic, finely chopped
1 tbsp mixed dried herbs
1 tsp paprika
1/2 tsp cumin
1 tin chopped tomatoes
4 eggs (tofu if vegan)
Salt and pepper, to taste

To serve: sourdough bread (or your favourite bread!)
Optional: fresh coriander to sprinkle on top
