Banana Coffee Walnut Muffins

METHOD:

Heat the oven to 200/180 fan/Gas 6

Combine the oats, baking powder and almonds in a mixing bowl.  In another bowl mash the bananas together with the honey and coffee to make a smooth mixture, before adding to the dry mix. Finally add the walnuts and briefly mix together. 

Spoon in to a cookie/cup cake tray and bake in oven for 15-20 minutes until golden brown on top and just cooked on the inside, then leave to cool before eating.

INGREDIENTS:

  • 1 mug ground almonds

  • 1/2 mug oats

  • 3 ripe bananas 

  • 2 tablespoons honey

  • 1 shot coffee

  • 1 handful of crushed walnuts

  • 1/2 teaspoon baking powder

TIPS: Really nice on their own or with a handful of berries and a dollop of your favourite yoghurt. Can be stored in an airtight container for up to 2 days.
