Puy Lentil and Feta Salad

METHOD:
Whisk the olive oil, vinegar, mustard, salt and pepper together (or shake in a lidded jar)
Combine the lentils, celery, onion and feta in a bowl then pour over dressing
INGREDIENTS:
1 pouch ready cooked Puy or dark lentils
2 sticks celery, finely chopped
1/2 pack feta cheese (or vegan alternative), diced
1 red onion, finely chopped
2 tbs olive oil
1 tbs red wine vinegar
1 tsp wholegrain mustard
TIPS: Add some diced cooked beetroot for even more flavour
