Sweet Potato Gnocchi
You will need:
1 sweet potato
2-4 tablespoons flour (you can use gluten free or almond flour if you want but I will use normal plain flour)
rocket
sun dried tomatoes
3-4 mushrooms
frozen peas
FOR THE PESTO YOU WILL NEED:
1 large handful of basil
1 tablespoon pine nuts
1 clove of garlic
olive oil
1 teaspoon of cream cheese or yoghurt (I will use soy yoghurt)
1/2 lemon
