Egg and Courgette Fritters

METHOD:

Grate the courgette into a bowl and add the flour, spring onion, chilli, coriander and seasoning.  Then mix in the egg until it forms a thick batter.

Heat a frying pan on medium heat with a splash of olive oil and then spoon your mixture into the pan to form 4 fritters.

Fry on one side for about 3 minutes before flipping and heating on the other side for 2-3 minutes.

INGREDIENTS:

  • 1 large egg, whisked

  • 1 spring onion, finely sliced

  • 1 golden or green courgette

  • 1/2 or 1 fresh chilli, finely chopped

  • 1 tbs flour

  • 1 tbs olive oil

  • 1 handful fresh coriander, roughly chopped

  • salt and pepper

TIPS: Serve with salad and a dollop of natural yoghurt on top.
