Cauliflower Pizza

METHOD:

Heat the oven to 180C/160C Fan/Gas 4

Blend up the cauliflower finely.  Add to a mixing bowl and combine with the herbs, olive oil and 3 tablespoons of flour.  The mixture should be wet but able to form a ball of dough, add more flour if necessary.

Smooth the mixture out onto a sheet of baking paper on a baking tray. Bake the base for 20 mins until golden brown and firm.

Smooth on the tomato paste, sprinkle on the cheese and add your chosen toppings and bake for a further 10-15 minutes until all golden brown, then  sprinkle with fresh basil

INGREDIENTS:

  • ½ head medium cauliflower

  • 3-5 tablespoons of flour

  • 1 tsp mixed herbs

  • 1 tbs olive oil

  • 1 tbs tomato paste

  • Cheese (can be vegan) - handful grated

Topping Options:

  • Mushrooms, sliced

  • Olives

  • Fresh Basil leaves

  • pepper, diced

TIPS: Spread on a tablespoon of pesto sauce for extra flavour
